Stuffed!

Playing with my food is fun. Today I experimented with mash. I took a large potato from last week’s veg box, chopped it into chunks and boiled it, throwing in a handful of broccoli florets after a while. I turned the oven on (ooh la la) and chopped a red pepper in two, scooping out the seeds. Celery next, which inspired the experiment because there was so much of it in my veg box this week. I washed one stalk and chopped it into tiny cubes.

After mashing the broccoli and potato with goats butter, I added the celery and an egg and mixed it all up well before stuffing the pepper halves with it. A drizzle of olive oil and into the oven they went leaving me to deal with the leftover mash mixture. I added chopped garlic to the hot oil in my frying pan then dropped spoonfuls of mash on top, pressing it onto the garlic. After a while, when it smelled lovely, I flipped the mixture to brown the other side. The garlic was nicely embedded. As soon as it smelled ready I scooped it onto my plate and added a dollop of creme fraiche. I ate it while I waited for the peppers. Yum.

The celery adds a tiny crunch to the mash and the sweet red peppers burst with juice that mingles so well with the potato which is quite dry.
